Dad's Cookies

It's the day before school starts and we decided to make some choc. chip cookies to celebrate. Last year my 5 year old made some choc. chip cookies with her kindergarten class for father's day, and I just loved the recipe. It's really got it all! I thought it was the perfect recipe for tonights special cookies. My hubby grabbed my camera to snap some shots of the girls being "helpful". They were so adorable, and really tried to be respectful of each other. It was definitely photo worthy! I reeeally didn't want a photo of me because I was a total slob today, but alas, he caught me in one. Our baby was feeling oh so left out sitting at the kitchen table. She really wanted a turn stirring and tasting, I'm sure. man, they turned out sooooo yummy.

I just have to share the recipe. They taste just like the dad's cookies you buy at the store. Oh - one little trick you might like, I used both milk and semi-sweet chocolate chips. I mixed about 1 1/2 cups of chips all together into the batter, then I poured about 1/2 cup of the choc. chips into a bowl where I dipped the dough balls before putting them on to the cookie sheet. If you do that it makes for a really nice looking cookie, and who doesn't love more chocolate chips?
ANyhoo - here's the recipe. Enjoy!

Dad's Cookies

  • 1 cup butter or margarine (I LOVE real butter in these)

  • 1 cup each sugar and brown sugar

  • 2 eggs, well beaten

  • 1 cup fine coconut (I run mine through the food processor)

  • 2 cups white flour

  • 2 cups rolled oats (I also run these through the food processor until a coarse powder)

  • 1/2 tsp. each salt and baking soda

  • 1 tsp. each baking powder and vanilla

  • 2 cups chocolate chips (opt.)

  1. Cream butter, sugars, and eggs.

  2. In separate bowl combine flour, coconut, soda, rolled oats, baking powder, and salt.

  3. Add dry ingredients to butter mixture

  4. Add vanilla and mix well.

  5. Stir in chocolate chips (opt.)

  6. Make into small balls, then dip into bowl of choc. chips (opt.)

  7. Place balls onto cookie sheet and flatten slightly with a fork

  8. Bake @ 350F for 10-12 minutes or until golden.

Sometimes we all need pictures of us when we are "slobby" to prove that we aren't always "picture perfect" everytime the camera is around. I don't think you look slobby. You look like what every Mom probably looks like when baking cookies with their children. Being 'Real' is okay.
